I wanted a real snack I could grab between everything else going on. Protein bars felt like candy, shakes weren't food, and boiling and peeling eggs myself took forever.
The eggs at the grocery store were worse: overcooked, chalky, and grey around the yolk. Nothing like the marinated soft-boiled eggs I grew up with, the kind with a glossy brown outside and a yolk that's still soft in the middle.
So I'm making them, for anyone who wants a better egg. Real eggs, marinated overnight, peeled and packed so you can grab one and go.
